I picked up a nice hunk of Cantelet at a reasonable price at Union Market in the East Village.
And I think it's okay to be conscious of cheese prices when costs are soaring. I saw admittedly rare British imports at almost $60 per lb at Bedford Cheese this week. Wow. I mean, it's cheese, folks.
Cantal is often compared with British cheddar, and rightly so. It's less acidic and tangy than a full-flavored Montgomery or a Keens, but it does have that citrusy prickle, backed up by rich creaminess.
Red wine, of course, but also full-bodied beer or hard cider will enhance it. You could even permit yourself a pickle on the side.
