Here's an old friend, Fiacco di Capra--which apparently means "weariness of the goat." Nobody seems to really know why.
This sample, from Murray's, is actually quite fresh; indeed, I wonder if it's a little immature.
Maybe I should leave it out to ooze, but it doesn't have the usual Tallegio-like stinkiness.
By no means unpleasant, though, with a glass of rosato. Butter notes in the paste, a slightly gritty, mild rind (washed with nothing more aggressive than a brine).
This is a lunch cheese, if you know what I mean. Light and cheerful. Not a blockbuster to follow dinner.
