What's to say about this classic French blue, a rank below Roquefort, but good enough for any occasion. I wish I was talented enough to paint it before eating it. What a still life.
Slightly salty, slightly sweet, it went nicely with a broad-shouldered Malbec--but you could drink a chilled white wine with it. In fact, it's very hard to have a bad experience with this cheese (this sample from Union Market).
