This week, something from Saxelby's just come into season. Semi-firm goat, so I thought the scribbled name was Riley's Goat.
No, no. Named for the coat of the sheep and/or goat dog at Blue Ledge Farm, I believe, who must be a very blue-grey hound indeed.
The cheese is a fine one, semi-firm, the texture of the paste smooth when fresh, turning crumbly after a day or so. Edible natural rind.
Mild acidity, tongue-coating creaminess, pleasant goaty sourness in the finish. Not a prima donna; any light red or white will accompany it and it can be served cool from the refrigerator.
