Why let this go to waste?
For no good reason, these pictures, from a pig-out in May 2007, never made it online. Enjoy them now.
The occasion was a "Big Pig Gig", as Daisy May's BBQ likes to call it. You order in advance, a half or whole pig (the latter about thirty pounds) - or a whole pork butt - and belly up to one of Daisy May's long tables. "Fixin's" are included. More information here.
This occasion was oragnized by a fellow MouthfulsFood member, but the restaurant didn't let us loose with the big knifes. That's a pro doing the carving.
The flesh was smooth, slippery-silky, and sweet.
And yes, there was a lot of it...
...although I don't think we took much - any? - away with us.
